My Super Easy Kickin’ Guacamole Recipe

Hey guys! I’m finally back with another recipe for you all.

I know it’s been a while, but I needed some time to myself – and that’s okay. It’s important to know that you ARE allowed to take a step back and regroup when you’re feeling stressed or overwhelmed.

It’s way better than burning out, trust me.

But I am back and feeling refreshed! I have so many new and exciting projects to share with you! First things first, though. Guac.

I’ll be completely honest here… I was never a big avocado fan. I actually despised it. Even just the thought of guacamole disgusted me. I’m not sure what changed, but now I absolutely LOVE it!

I’ve been having avocado toast a few days per week, and I think I’ve realized it’s all in the seasoning. If my avocado isn’t seasoned, then I can’t stand it. I am a firm believer that SEASONINGS MAKE MEAL! Don’t be afraid to make things a little spicy!

Avocado is such a great food to incorporate into your diet. It’s a high fat fruit, full of healthy monounsaturated fatty acids – mostly oleic acid. Oleic acid is a potent anti-inflammatory and some studies have shown it may suppress genes linked to cancer [1] [2].

Avocado is also jam packed with nutrition. It’s one of the best sources for vitamin B9, or folate. This vitamin is crucial for the development of red and white blood cells and even helps produce DNA and RNA! It’s important that pregnant women get adequate folate during pregnancy to reduce risk of neuronal tube deformations in their baby and birth defects.

If you’ve ever heard of The Doctrine of Signatures, it basically states that foods look like the organs they benefit. For example, if you slice a carrot, it looks like an eye. And we all know that carrots are good for your vision.

Well, considering avocados are high in folate and folate is crucial through pregnancy, it should be no surprise that an avocado resembles a uterus! Don’t believe me? Take a look!

Kickin’ Guacamole

A quick and easy, tangy, fresh guacamole with a kick! This guac is totally guilt free and packed with nutrition!

Course Appetizer, Side Dish
Servings 4

Ingredients
  

  • 2 ripe avocados
  • 1 small vine tomato
  • 1/4 red onion
  • 1 tbsp olive oil
  • 1 lemon, juiced
  • 1 tsp salt
  • 1 tsp lemon pepper
  • 1 tsp garlic powder
  • Cayenne pepper, to taste
  • Chili pepper flakes, to taste
  • 1/4 cup fresh parsley*, chopped

Instructions
 

  • Cut open your avocados and scoop out the flesh into a medium sized bowl. Mash up the avocado using a fork.
  • Dice the tomato and red onion into small pieces and add to the bowl.
  • Add in the olive oil, lemon juice, salt, lemon pepper, garlic powder, cayenne pepper and chili flakes. Mix everything together well until fully combined.
  • Add in your parsley and again combine the mixture.
  • Serve on a slice of toast or with tortilla chips.

Notes

*My family isn’t a fan of cilantro, which is why I used parsley. But feel free to use whichever herb you prefer, or mix in a bit of both!
