Kickin' Guacamole

A quick and easy, tangy, fresh guacamole with a kick! This guac is totally guilt free and packed with nutrition!

Ingredients
  

  • 2 ripe avocados
  • 1 small vine tomato
  • 1/4 red onion
  • 1 tbsp olive oil
  • 1 lemon, juiced
  • 1 tsp salt
  • 1 tsp lemon pepper
  • 1 tsp garlic powder
  • Cayenne pepper, to taste
  • Chili pepper flakes, to taste
  • 1/4 cup fresh parsley*, chopped

Method
 

  1. Cut open your avocados and scoop out the flesh into a medium sized bowl. Mash up the avocado using a fork.
  2. Dice the tomato and red onion into small pieces and add to the bowl.
  3. Add in the olive oil, lemon juice, salt, lemon pepper, garlic powder, cayenne pepper and chili flakes. Mix everything together well until fully combined.
  4. Add in your parsley and again combine the mixture.
  5. Serve on a slice of toast or with tortilla chips.

Notes

*My family isn’t a fan of cilantro, which is why I used parsley. But feel free to use whichever herb you prefer, or mix in a bit of both!
