Me again, with another recipe favourite of mine! I’ve posted these on my Instagram stories quite a few times now because I. cannot. get. enough. Seriously these burritos are freaking fantastic!

They’re super easy to make and extremely customizable. In the recipe below, I use my favourite ingredients and add-ins, but feel free to spice things up however you like.

So, why use cauliflowers in your burritos, you may ask?

If you’ve seen my latest posts, you’ll know that cruciferous veggies are some of the best foods for you. Not only are they filled with necessary fibre, but they’re also great at promoting liver detoxification.

What’s more, cauliflower and other cruciferous vegetables are excellent at reducing the risk of cancer. They contain a compound called indole-3-carbinol, which is a potent anticancer compound.

Some studies have shown this compound may prevent breast cancer, colon cancer, and other forms of the disease. [1] [2]

Vegan Roasted Cauliflower Burritos

Delicious roasted cauliflower burritos jam packed with your favourite flavours, topped with homemade spicy mayo. Unlimited customizable options!

Ingredients
  

  • 1 head cauliflower
  • 2 tbsp avocado oil
  • 1 tsp turmeric
  • 1 + 1/2 tsp paprika, divided
  • 1 + 1/2 tsp garlic powder, divided
  • 1/2 + 1/2 tsp chilli powder, or more if preferred, divided
  • 1/2 tsp salt
  • 1/2 + 1/2 tsp lemon pepper, divided
  • 1 avocado
  • 1/2 cup shredded red cabbage
  • 1/4 cup chickpeas
  • 1/4 cup vegan mayo, or regular mayo
  • 3 whole grain tortilla wraps

Instructions
 

  • Line a baking sheet with parchment paper and preheat oven to 425F. Chop the head of cauliflower into medium sized chunks. You don't want the pieces too large or small, just bite sized!
  • After rinsing the cauliflower pieces, add to a large bowl. Add the avocado oil, turmeric, 1 tsp paprika, 1 tsp garlic powder, 1/2 tsp chilli powder, salt and lemon pepper. Mix well to combine. If you're mixing with your hands, make sure to wear gloves as turmeric will stain your nails! Lay out the pieces on the baking sheet in an even layer and bake for 35 minutes, flipping halfway through.
  • While the cauliflower is roasting, thinly slice your cabbage (or use store bought!). Rinse and drain your chickpeas. Cut the avocado in half and scoop out the flesh into a small bowl and mash until creamy. To make your spicy mayo, add the mayo, paprika, garlic powder, chilli powder and lemon pepper to a small bowl. Add a splash of water to make the mixture more runny, if preferred. Prepare any other add-ins you'd like to include in your burritos.
  • Lay out your tortilla wraps and layer in your add-ins starting with a spread of avocado, some cauliflower bites, chickpeas, shredded cabbage, then top with your spicy mayo. Carefully wrap the burrito up and enjoy!

    I’ve meaning to make these for a few weeks and I finally got a chance to do so. These were SO delicious! I was hesitant at first about the mayo based dressing (I used vegan), but with a little splash of water it really complemented the cauliflower! I didn’t have cabbage on hand but I had everything else and it was still amazing & surprisingly filling! Would definitely make again and I highly recommend! I always make boring tacos/burritos with a pepper mix or with veggie ground round but this really changed the game! Thank you Alicia! Excited to try your other vegan recipes!
