Easy Greek Grilled Chicken Skewers

Hey, friends! Back with another recipe and this one is perfect for summer. Super simple, easy to create, and so so delicious!

Get your BBQ ready, because we’re about to grill up so amazing Greek chicken skewers!

I started this recipe earlier in the day to give the chicken tons of time to marinate and soak up that flavour. This is key because not only does this create maximum flavour, but it also tenderizes the chicken.

I used 2 extra large chicken breasts, sliced in half and then diced. If you’re using thinner chicken breasts, you can use 4 pieces. Then you’ll want to cube up that chicken into bite sized pieces.

I mixed up all of my seasoning ingredients into a bowl and added that mixture to the cubed chicken. Set that aside in the fridge for about an hour, or longer.

Now this step was CRUCIAL. For a minimum of 30 minutes you’ll need to soak your wood skewers in some water. This prevents them from burning on the grill. Alternatively, you can use metal skewers, which means you can skip this soaking step.

After your skewers have been soaking and your chicken has been marinating, it’s time to assemble!

Carefully pierce your chicken with the skewer, leaving enough space on either end. I managed to fit 4-5 pieces per skewer based on how much chicken I had, which left me with about 12 skewers.

Because the chicken cubes aren’t big, these skewers will not take long on the grill at all. I like to rotate my chicken quite a few times on the grill to prevent burning. A little bit of colour is cool, but no burnt chicken for me!

After about 15 minutes, your chicken should be cooked. And now it’s time to enjoy! I served mine with some lemon rice, lettuce mix, and a Greek-style salad of tomatoes, cucumbers, red onion and black olives.

Greek Grilled Chicken Skewers

Ingredients
  

  • 2 large chicken breasts,
  • 1/4 cup extra virgin olive oil
  • 2 tbsp lemon juice
  • 2 tbsp Greek seasoning
  • 1 tsp minced garlic
  • 1 tsp lemon pepper
  • 1/2 tsp salt

Instructions
 

  • Slice your two large chicken breasts in half to create 4 thinner breasts. Cube up the chicken into 1 inch pieces. Make sure the pieces are big enough to be put on the skewer. Add the pieces to a large bowl and set aside.
  • In a small bowl, add extra virgin olive oil, lemon juice, Greek seasoning, garlic powder, lemon pepper and salt. Mix well to combine. Add this mixture to the bowl of chicken, mix well, cover and set in the fridge for at least 1 hour.
  • While the chicken is marinating, add the wood skewers to a baking dish and cover with water for about 30 minutes. If you are using metal skewers, you can skip this step.
  • Once the chicken has marinated and the skewers have soaked, you can start assembling your skewers. Add 4-5 cubes of chicken to each skewer, keeping the chicken pieces close together but not squished.
  • Preheat your barbecue to about 350F and scrape off any char or grime left over from your last grilling. Place the skewers on the grill, spaced a little bit apart to allow for thorough cooking. Grill for about 12-15 minutes or until chicken has cooked through, turning often, keeping the lid closed between flips.
  • Serve immediately with your favourite side dishes. Pairs well with lemon rice and salad. Enjoy!
