Line a baking sheet with parchment paper and preheat oven to 425F. Chop the head of cauliflower into medium sized chunks. You don't want the pieces too large or small, just bite sized!
After rinsing the cauliflower pieces, add to a large bowl. Add the avocado oil, turmeric, 1 tsp paprika, 1 tsp garlic powder, 1/2 tsp chilli powder, salt and lemon pepper. Mix well to combine. If you're mixing with your hands, make sure to wear gloves as turmeric will stain your nails! Lay out the pieces on the baking sheet in an even layer and bake for 35 minutes, flipping halfway through.
While the cauliflower is roasting, thinly slice your cabbage (or use store bought!). Rinse and drain your chickpeas. Cut the avocado in half and scoop out the flesh into a small bowl and mash until creamy. To make your spicy mayo, add the mayo, paprika, garlic powder, chilli powder and lemon pepper to a small bowl. Add a splash of water to make the mixture more runny, if preferred. Prepare any other add-ins you'd like to include in your burritos.
Lay out your tortilla wraps and layer in your add-ins starting with a spread of avocado, some cauliflower bites, chickpeas, shredded cabbage, then top with your spicy mayo. Carefully wrap the burrito up and enjoy!
